Le sorbitol est une poudre cristalline blanche, inodore, très soluble dans l’eau, qui est obtenue par hydrogénation du dextrose et cristallisation.

Peut être utilisé comme édulcorant de charge ou comme agent de compression en confiserie sans sucres mais aussi comme humectant et stabilisant dans des applications de biscuit et pâtisserie : E420 (ii)
